White Chocolate Cup Cakes

125gm butter
1/2 cup caster sugar
3 eggs
80gm white chocolate
3/4 cup plain flour
1 tsp baking powder
Beat the butter with the sugar till light and creamy, add the eggs, beating well after each addition. Stir through remaining ingredients.
Fill cupcake papers about 2/3 full. Bake in a 180 degree oven for 20 minutes, or until the cake bounces back when pressed in the middle.
I love serving these with whipped cream and strawberries instead of icing!

Chocolate Brownies

Ingredients
125 g butter
1½ cups caster sugar
½ cup cocoa
1 teaspoon vanilla essence
¼ teaspoon salt
2 eggs
1 cup plain flour
1 teaspoon baking powder

Method

Melt the butter in a medium saucepan and add the sugar, cocoa vanilla and salt, remove from heat and allow to cool slightly before whisking through the eggs.
Fold through sifted flour and baking powder.

18 x 28cm tin

Bake at 170°C for 25-30 minutes.
The mixture will seem soft but will harden on cooling.
Allow to cool in tin before removing.

Melting Moments

Ingredients

  • 250g butter, softened
  • 1 1/2 cup plain flour
  • 1/2 cup icing sugar
  • 2/3 cup custard powder
  • 80g butter, softened, extra
  • 1 1/3 cup icing sugar
  • 1 tbs lemon juice
Cream the butter till it’s nearly white, then add the flour, sugar and custard powder at the end. Roll into balls and squash down with a fork then cook for about 15 minutes at 106 degrees.

 

To make different flavoured melting moments, passionfruit etc, just change the flavour of the icing and leave the biscuit the same – vanilla extract, orange juice, rose water etc.
